The company manages over 800 hives moved seasonally across the island according to which flora is in bloom. Early spring profiles tend toward fresh, floral brightness as lighter nectar sources open. Mid-spring and summer harvests move toward warmer, more resinous notes as heavier-flowering species peak. Textures range from smooth and free-flowing through to fine-grained crystallisation, and colours span light gold through to deeper toffee tones, all determined by nectar source rather than processing.
The Rare Release Range and Its Natural Triggers
Several varieties in the range are produced only when specific environmental conditions allow a harvestable bloom. Remota Honey develops warm caramel and toasted nut notes from remote mallee scrub nectar, available only when seasonal conditions in that specific terrain align. Boobialla Honey — produced from the coastal winter flowering plants now at the end of their bloom window — carries a delicate herbaceous sweetness unlikely to appear again until next winter.
Yacca Honey is among the most irregular in the range, requiring bushfire to trigger the grass tree's towering flower spikes before the bees can work the nectar. Eucalyptus Cosmophylla Honey comes from a South Australian endemic species that produces inconsistently across seasons, while Karkalla Honey draws from the coastal pigface plant, delivering a fresh, sharp citrus quality suited to aged cheese and cured meat pairings. Several of these varieties appear in the range only every two to four years.
